Provençal Ham Quiche

Celebrate spring with this brunch classic. A chilled glass of Lavender Plum cider pairs beautifully with a slice of this ham quiche.

Why? It's all in the secret ingredient: herbs de Provence.

This blend of herbs from southern France accentuates the ham and cheese combo while doing a ballet with the floral lavender note in our lovely Lavender Plum cider. The seasonal flavours of the cider and this dish will surely get you excited about the warm weather ahead.


  • 4 beaten eggs
  • 1/2 cup milk
  • 1/2 cup heavy cream
  • 1 cup cooked ham, small dice
  • 1/2 cup provolone cheese
  • 1/2 cup cheddar cheese
  • 1/2 tbsp dijon mustard
  • 1/2 tsp herbs de Provence
  • 1/2 tsp salt
  • 1/4 tsp white pepper
  • 1 pie dough shell*
  • flat-leaf parsley (optional garnish)


  1. Preheat the oven to 350F.
  2. In a mixing bowl combine eggs, milk, cream, dijon mustard, herbs de Provence, salt, and pepper. 
  3. Line the pie plate with pie dough and spread ham and cheese throughout the bottom of the pie plate. 
  4. Slowly pour in the egg mixture.
  5. Bake the quiche for 45 minutes and remove it from the oven.
  6. Allow the quiche to cool for 5 minutes before slicing. 
  7. Garnish with flat-leaf parsley.
