With the seasons changing we start to look towards lighter meals that keep us going through the longer days in the orchard. This delicious hearty salad is great for lunch, it is nutrient rich and versatile but won't weigh you down. It pairs excellently with our Revival Semi-Dry cider which adds a nice crisp tartness to balance the creamy tahini dressing and flavours of cumin and fresh cilantro.
Ingredients:
Roasted Vegetables
Tahini Dressing
Chopped Leafy Green Salad
For the salad, include a mix of your favourite leafy greens including: kale, spinach, arugula, beet greens, Swiss chard, and copped fresh cilantro. Add vegetables including chopped cucumber, baby tomatoes, and grated carrots.
Optional Toppings
Enhance your salad with added protein including chicken breast, spiced chickpeas, diced cheese, hemp hearts, and chia seeds

Assembly
To assemble your hearty salad, place the leafy green salad at the bottom of the bowl, top with roasted vegetables and any extra protein you would like to add. Drizzle the tahini dressing across the top and enjoy!
