Orange Almond Jelly Roll Cake

Need an easy, show stopping, Christmas dinner dessert that won't leave you in the kitchen all day? Try our Orange Almond Jelly Roll Cake created to enjoy with our Christmas cider of choice, the Spiced Cherry! It's citrusy and nutty with a touch of cardamom - basically a holiday party in your mouth🎄.

  • 3 eggs (room temperature)
  • 3/4 cup sugar
  • 1/3 cup water
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup AP flour
  • 1/4 cup almond flour
  • 1 cup marmalade
  • 1/4 tsp cardamom powder or crushed cardamom seeds
  • powdered sugar for dusting
  • slivered almonds for topping


  1. Set oven to 375°F. 
  2. Line a 15x10x1 in baking sheet with parchment paper or a silicone baking sheet. 
  3. Beat eggs on high speed until very thick and yellow. This will take about 5 minutes.
  4. Keep beating eggs and slowly add sugar - about 2 tbsp at a time. Keep mixing until grit of the sugar is almost non-existent when touching the batter between two fingers. 
  5. Turn mixer to low speed and add water and both extracts. Mix until combined
  6. Turn off the mixer. In a separate bowl, sift together baking powder, salt, AP flour, and almond flour.
  7. Fold in the flour blend being careful not to over mix.
  8. Pour into the lined baking sheet and bake for 12 minutes.
  9. While the cake is baking, dust the top of a dry kitchen towel with powdered sugar. 
  10. Once the cake is baked, invert the cake onto the kitchen towel while warm. Carefully remove the parchment paper on top.
  11. Roll the cake onto the towel (starting from the short side) and allow it to cool for 1 hour.
  12. While the cake cools, mix the marmalade with cardamom. Set aside.
  13. Once cooled, unroll the cake and generously spread the marmalade mixture.
  14. Roll the cake once again, but this time without the towel and place on serving platter.
  15. Dust with the top of the jelly roll cake with powdered sugar and slivered almonds.
