The Fermentation Process

Have you ever wondered how we squeeze a juicy heritage apple from our orchard into our thirst quenching craft cider?

We take pride in our craft of fermenting unique apples, creating delicious blends, and shipping them to your door. This is how it's done...

Let's make Cider

🍎We start by hand-harvesting heritage apples. Each variety contributes its own unique flavour to our ciders. With over 30 varieties of apples in our orchard, we take pride in hand picking all our beautiful apples. Even though hand harvesting is labour intensive, it allows us to keep each of our varieties separate and the apples in the best shape, before we start making cider. 

🍏The picked apples then take a bath before they are milled and pressed. You're welcome to indulge in this fresh pressed juice, but we like to take it further. 

🍎Now for fermentation - Our fresh pressed juice goes into fermentation tanks so that yeasts can convert the natural sugars into alcohol and acids. The yeast we use is unique to each cider- Revolution Dry only uses natural wild yeasts, while champagne yeast is used for the Makers’ series. This is where we can control how sweet or dry your favourite cider is. The fermentation is cold and slow. Primary fermentation is generally 30 days long followed by aging for up to 3 months. 

🍏Once the cider has fermented, we move it to barrels for maturation. This helps flavours to develop and creates depth for your experience. Be sure you try some of our special barrel aged series.

🍎 Here is where it gets fun- blending! Want hints of sweet cherry and spice? What about a twist of lemon? Or, do you prefer to keep it cool with cucumber and mint? Blending our apple cider with flavours allows us to experiment with flavour pairings and creates unique ciders combinations for everyone to enjoy.

🍏 Almost there! We just need to stabilize the cider before it's ready to drink. Sometimes extra sugars need to be added to our ciders to adjust sweetness and keep with consistency. To keep these sugars from fermenting it is important we stabilize the cider. This way every bottle of spicy ginger craft cyser and blackberry sage tastes the same as the last.
