A cold, slow fermentation followed by a period of rest and maturation helps to develop the flavours and brings us back to traditional handcrafted cidermaking methods. Meanwhile, we try to enjoy all our beautiful province has to offer - including forging our Christmas tree! The Duriseks family tradition of gathering the troops and heading to the mountains to find the perfect tree is one we cherish. The crisp smell of a freshly cut tree calms our home and clears our heads.
