Roasted Vegetable Salad with Tahini Dressing

With the seasons changing we start to look towards lighter meals that keep us going through the longer days in the orchard. This delicious hearty salad is great for lunch, it is nutrient rich and versatile but won't weigh you down.  It pairs excellently with our Revival Semi-Dry cider which adds a nice crisp tartness to balance the creamy tahini dressing and flavours of cumin and fresh cilantro.    

Ingredients:

Roasted Vegetables

  • 1 small butternut squash, cored and cut into 1" pieces
  • 2 beets, peeled and diced
  • 1 small head of cauliflower, cut into small florets, 3 cups
  • 8 Brussels sprouts cut in half
  • 4 tbsp olive oil
  • 1 tbsp sea salt
  • 1 tsp cracked chili peppers
  • 1 tsp ground cumin
  • cracked black pepper to taste

Tahini Dressing

  • 1/2 cup tahini paste
  • Juice of 1 lemon
  • 1/2 tsp sea salt, more to taste
  • 1/4 cup ice water

Chopped Leafy Green Salad

For the salad, include a mix of your favourite leafy greens including: kale, spinach, arugula, beet greens, Swiss chard, and copped fresh cilantro. Add vegetables including chopped cucumber, baby tomatoes, and grated carrots.

Optional Toppings

Enhance your salad with added protein including chicken breast, spiced chickpeas, diced cheese, hemp hearts, and chia seeds

Roasted Vegetable Instructions

  1. Preheat the oven to 400F.
  2. In a mixing bowl combine olive oil, sea salt, cracked red pepper, black pepper and cumin.
  3. Toss the roasted vegetable ingredients until they are thoroughly covered with the oil oil / spice mixture.  
  4. Put the roasted vegetable mixture in a roasting pan, making sure that they are placed in a single layer and not overcrowded.  
  5. Roast vegetables for 30 minutes making sure to turn them at least once.  
  6. Remove from the oven and allow to cool

Tahini Dressing Instructions

  1. Stir the tahini paste to mix in any separated oil.
  2. In a food processor or medium bowl, whisk together tahini pasted, lemon juice, salt and ice water. 
  3. Work the mixture until smooth, adding more ice water if you prefer a thinner consistency to your dressing.  Taste and add more salt if necessary.

Assembly

To assemble your hearty salad, place the leafy green salad at the bottom of the bowl, top with roasted vegetables and any extra protein you would like to add.  Drizzle the tahini dressing across the top and enjoy!
